Sorting table, cold pre-fermentation maceration, cuvaison of three weeks in thermo-regulated stainless steel vats.
Winemaking
Long and controlled vinification to obtain a colorful, fruity wine with round and long tannins. The final product is a pleasure wine of great finesse, and also of great care.
Tasting notes
Round and fruity, it is pleasant young but its structure allows it to evolve favorably for at least 7 to 8 years.

Ginning with sorting of the harvest.
Cold pre-fermentation maceration then pressing in inert pneumatic presses, avoiding the oxidation of the juices.
Fermentation in thermo regulated vats.
Aging on lees with stirring.
Tasting notes
This dry white wine, very fruity, fat and round, is of a great freshness.
It can be used as an aperitif or to accommodate crustaceans, fish, sausages or poultry.
