Each vintage has its vinification and its own breeding.

The vineyard
The vine is installed in order to better control the yield, to have an excellent leaf surface even after stripping. All operations in green are of paramount importance for a good aeration of the fruiting zone and to reach a good maturity.
Work is carried out rationally to keep the balance of the plant and promote self-defense: avoid the excesses that cause disease. As for tillage, depending on the age of the vine, the season, it will alternate:
Weed to prevent erosion, to plunge the roots. * Light work is to avoid too much competition and the development of nitrogen deficiency. * Under a fall condition, avoid winter asphyxiation. With all these small respects, the vine will give you what it has best and there the vini fi er will be able to express his talent.

Winemaking
We pick up the harvest with our own machine, so we have the choice of the best date of intervention. Equipped with an onboard ginner, the grapes will not stay in contact with the stalk and leaves. The grapes are then sorted on a vibrating table. During temperature controlled fermentations at 28 °, we perform daily pumping over. We alternate traditional winding in the air and reassembly with nitrogen, it allows to work well the Marc hat. At density 1040, we proceed to the shedding of each tank. After alcoholic fermentation and during maceration, we pumping out of the air. After tasting, we decide to sell. It is the turn of the malolactic fermentations, the wine is kept at 20 °. We make

Tasting notes
Exceptional vintage, rich and structured, specialist wine but also amateurs in search of meaning. Wine contest that remains accessible. From plots for which we do even more specific work as thinning, harvest in green. Aged in French oak barrels with the finest grapes. Cherry red color slightly evolved, very complex nose, iris powder, dried banana, violet, toasted tip, very ripe strawberry lots of freshness on the attack. Sweet tannins, fruit cone flavor accompanied by a hint of oak. Elegant and complex wine, very beautiful aromatic length.

The vineyard
Harvested at optimum maturity, the clusters are scraped. The grapes are then sorted on a vibrating table and slowly pressed with horizontal presses at low pressure. This juice is cooled to 4 ° -5 ° to deposit and thus remove the mud. This juice is then launched and maintained in fermentation at 17 ° -18 °, essential to obtain a fresh and fruity wine. At 1060 the must is then lowered into French oak barrels. It will then be aged on lees and stirred several months before bottling in April.

Tasting notes
Beautiful aromatic intensity with a lot of complexity. A first nose of hazelnut, roasted almonds and after aeration we discover aromas of honey and citron con fi t. We are then surprised by an enveloping mouth with sweetness in attack and a beautiful volume in the middle of mouth. The minerality remains present and helps to intensify the aromatic persistence. The woody notes are subtle and finally present with a slightly toasty touch. An elegant wine with a good aging ability.

Food pairing and wine
Wine with a consensual profile, can be drunk from aperitif to dessert (olives with anchovies, seafood, fish, white meats, goat cheeses). To taste between 8 and 12 °.
